FRIED RICE WITH QUINOA

HOW LONG DOES IT TAKE?

This recipe will take you: 45 minutes

INGREDIENTS FOR 4 SERVINGS

  • 200 g Quinoa
  • 250 g Tofu
  • 3 medium-sized carrots
  • 50 g peas
  • 200 g red cabbage, thinly sliced
  • 50 g spring onions
  • 2 tbs soy sauce
  • 1 tbs maple syrup
  • 2 tbs fresh orange juice
  • 2 tbs rice wine vinegar
  • 1-2 tbs sesame oil
  • 1 ts finely chopped ginger
  • sesame seeds
  • fresh parsley

PREPARATION

  1. Cook quinoa in about 2.5 times the amount of water for 20-25 minutes until it’s almost done but still has some bite to it.
  2. In the meantime, mix together soy sauce, maple syrup, orange juice, rice wine vinegar, and ginger in a bowl and put aside for now.
  3. Peel carrots and cut into small cubes, then finely slice the red cabbage.
  4. Heat sesame oil in a large pan and fry tofu until its crispy-golden.
  5. Add carrots, peas, and red cabbage and fry for 10 minutes.
  6. Add spring onions, quinoa, the sauce and sesame seeds, mix everything together, and let everything cook together for a few more minutes.
  7. Garnish with fresh parsley.
