HOW LONG DOES IT TAKE?

INGREDIENTS FOR 4 SERVINGS
- 200 g quinoa
- 250 g tofu
- 3 medium carrots
- 50 g peas
- 200 g red cabbage, shaved
- 50 g spring onions
- 2 tablespoons soy sauce
- 1 tbsp maple syrup
- 2 tbsp. fresh orange juice
- 2 tbsp. white wine vinegar
- 1-2 tbsp. toasted sesame oil
- 1 tsp finely chopped ginger
- Sesame seeds
- 1 bunch flat leaf parsley
- and whatever other greens you can find
PREPARATION
- Cook quinoa with about 2.5 times the amount of water for 20-25 minutes until it still has a slight bite.
- Meanwhile, mix soy sauce, maple syrup, orange juice, white wine vinegar and ginger in a bowl and set aside.
- Peel carrots and cut into small cubes.
- Cut red cabbage into fine strips.
- Heat sesame oil in a large skillet, then fry tofu until crispy golden.
- Add carrots, peas and red cabbage and simmer for 10 minutes.
- Add scallions, parsley, quinoa and the sauce and cook for a few more minutes until everything is warm and well mixed.
- Sprinkle with sesame seeds and garnish with fresh parsley.
- If you have greens in the house, make our dressing and you have the perfect meal.
