HOW LONG DOES IT TAKE?
This recipe will take you: 45 minutes
INGREDIENTS FOR 4 SERVINGS
- 200 g Quinoa
- 250 g Tofu
- 3 medium-sized carrots
- 50 g peas
- 200 g red cabbage, thinly sliced
- 50 g spring onions
- 2 tbs soy sauce
- 1 tbs maple syrup
- 2 tbs fresh orange juice
- 2 tbs rice wine vinegar
- 1-2 tbs sesame oil
- 1 ts finely chopped ginger
- sesame seeds
- fresh parsley
PREPARATION
- Cook quinoa in about 2.5 times the amount of water for 20-25 minutes until it’s almost done but still has some bite to it.
- In the meantime, mix together soy sauce, maple syrup, orange juice, rice wine vinegar, and ginger in a bowl and put aside for now.
- Peel carrots and cut into small cubes, then finely slice the red cabbage.
- Heat sesame oil in a large pan and fry tofu until its crispy-golden.
- Add carrots, peas, and red cabbage and fry for 10 minutes.
- Add spring onions, quinoa, the sauce and sesame seeds, mix everything together, and let everything cook together for a few more minutes.
- Garnish with fresh parsley.
