Tempeh

PREPARATION

  1. Mix all the ingredients for the marinade in a bowl.
  2. Cut the tempeh into small cubes and add them to the marinade into the bowl.
  3. Mix the tempeh cubes with the marinade and leave to infuse for 20 minutes.
  4. Mix all the ingredients for the dressing in a large bowl.
  5. Cut the carrot, celery, orange, bell pepper and cabbage into thin strips. Wash the coriander, pat dry, remove the leaves from the stalk and chop into small pieces.
  6. Add the chopped vegetables and coriander to the bowl with the dressing and mix everything together.
  7. Briefly fry the marinated tempeh in a pan for 2 minutes.
  8. Top the tortilla wraps with spinach leaves.
  9. Spread the vegetables and tempeh over the spinach leaves.
  10. Roll up the tortilla wraps, cut in half as desired and enjoy.

INGREDIENTS FOR 4 PORTIONS

125 g tempeh

2 tortilla wraps you can use for e.g. the ones from https://www.beetgold. com

1 carrot

1/2 stalk of celery

1/2 orange

1/2 bell  pepper

2 handfuls of spinach leaves

1/2 bunch coriander

1/4 pointed cabbage

Salt and pepper

For the marinade:

1 teaspoon cayenne pepper

1 tsp date sweetener

2 tbsp lemon juice

1 tsp smoked paprika powder

2 tbsp olive oil

For the dressing:

2 tbsp tahini

2 tbsp apple cider vinegar

1 tsp date sweetener
