PREPARATION

  1. Heat the ghee in a large pot. Add the onions, carrots, celery, sweet potatoes, garlic, chilli and ginger. Then mix in turmeric, cumin, salt and pepper and sauté everything for about 7 minutes.
  2. Then stir in the lentils and chopped tomato and pour in the vegetable stock.
  3. Bring to the boil, then simmer for 30 – 40 minutes.
  4. If you want the soup to be a little coarser, puree only half.
  5. To decorate, sprinkle with chopped coriander, a little lemon juice, grated lemon zest and a few chilli flakes.

INGREDIENTS FOR 2 SERVINGS

1 tbsp ghee

1 onion, finely chopped

2 carrots, diced

2 stalks celery, diced

1 large sweet potato, diced

2 garlic cloves, chopped

1 large chilli pepper, chopped

1 piece fresh ginger, chopped

1 tsp turmeric

1/2 ground cumin

salt, pepper

200 g red lentils

1 large tomato, chopped

900 ml vegetable stock

1 untreated lemon
