PREPARATION

  1. Cut up onion, remove the seeds of the chilli and cut up; then peel and dice potato.
  2. Heat up olive oil in a large pan on high heat.
  3. Sauté the onion, chilli pepper and potato in the hot olive oil for 4 minutes.
  4. Add the edamame, peas, spinach and vegetable stock, cover and let simmer for 20 minutes.
  5. Season the soup with salt and pepper, then purée in a blender until creamy.
  6. Drizzle the soup with sesame oil and serve sprinkled with sesame oil.

INGREDIENTS FOR 4 SERVINGS

1 onion, finely diced

1 green chilli, finely chopped

1 medium potato, peeled and diced

1 tbsp olive oil

500g edamame

100g fresh peas

200g young spinach

1.2 l vegetable stock

Salt & pepper

To serve: Sesame oil and black sesame seeds
