Cannellini beans
Can I really just eat the white beans out of the jar, and are other beans just as valuable?” – Sure. You can eat beans out of a jar, out of a can, out of a tetrapak…. Or let them soak overnight and cook them the next day. And other beans are definitely valuable too, cannellini beans are just special because they have this carbohydrate blocker.

Avocado
Avocados have a special profile when it comes to their nutritional values. They are a super source of unsaturated fatty acids, B vitamins, potassium, and and and. Especially the potassium can help against high blood pressure.
Other health benefits avocado has been linked to are a lower risk of cardiovascular disease, a higher feeling of fullness (which can result in weight loss), and even improved fertility.

PREPARATION
- In a medium saucepan, bring water to a boil, then carefully drop in eggs.
- Boil eggs for 8-10 minutes (they will be hard-boiled; if you prefer them more runny, just leave them in for a shorter time).
- Before you peel the eggs, rinse them well under cold water and the shell will come off easier.
- Peel and pit the avocado, then cut into strips.
- Place avocado and onions in a bowl and pour lemon juice over them; cover and let stand briefly (about 5 minutes).
- Add cannellini beans, tomatoes, honey, chives, and sunflower seeds to bowl. Mix well.
- Cut eggs into quarters and season with salt and pepper. Pour over salad.
INGREDIENTS FOR 4 SERVINGS
4 eggs
1 avocado
1 red onion, cut into strips
juice of 1 lemon
500g cannellini beans, drained and rinsed
3 cups of water per 1 cup of uncooked beans; and for seasoning, you can add various herbs to the boiling water as well
4 ripe tomatoes, quartered
2 teaspoons of liquid honey
1 handful of fresh chives
1 tablespoon roasted sunflower seeds
salt & pepper
1 handful fresh basil
1 handful fresh oregano
Optional: veggies of your choice, feel free to go wild. I like, for example, broccoli or spinach.
