In times of need, nettle shoots were often used as a substitute for spinach. Roland Kaiser once reported in an interview that his foster mother usually cooked nettle soup for lack of money.
Please do not eat the nettles raw because they can cause the well-known itching in the mouth. When mixed or steamed, however, this undesirable effect is lost.
Nettles have an anti-inflammatory and diuretic effect.

PREPARATION
- Collect young nettle shoots and young dandelion plants along with the flowers and stems. Make sure that they have grown up as untouched as possible. So don’t take anything from the roadside or the dog run.
- Rinse them well at home. You can also add a little curd soap to the water, so that any unwanted fat-soluble ingredients or bacteria will also come off easily.
- Grate the lemon zest. I do this with the Microplanezester grater.
- Now puree all ingredients in a power blender. I have this one from Vitamix.
- Divide the whole thing between two glasses or vials, store in the refrigerator and drink within three days.
INGREDIENTS FOR 2 SERVINGS
1 handful young dandelion leaves
1 handful of young nettle leaves
1 small apple with core
1/2 banana
Zest of 1 lemon
Juice of 1/2 lemon
So much water that the smoothie is nice and drinkable
