PREPARATION

  1. Dice the onion, wash the leek and cut into 1 cm rings; press the garlic.
  2. Heat the olive oil in a large saucepan.
  3. Sauté the vegetables for about 10 minutes until soft but not overcooked.
  4. Heat the stock separately.
  5. Add the chickpeas and sauté.
  6. Pour in the stock and simmer for about 10 minutes; then purée about half of the soup.
  7. Serve the soup in a plate and sprinkle with parsley.
  8. Grate or grate the Parmesan cheese and sprinkle over the soup to taste.

INGREDIENTS FOR 4 SERVINGS

2 tablespoons olive oil

2 large leeks

1 onion

2 cloves of garlic

1 tin of chickpeas

800ml stock

1/2 bunch flat-leaf parsley (chopped)

70 g grated (vegan) Parmesan cheese

Salt and pepper
