For this recipe you need about: 75 minutes


  • 1 whole cauliflower
  • Olive oil
  • Salt
  • Tahini paste
  • Lemon juice
  • Baking paper


  • Wash the cauliflower, cut off the leaves generously, but leave a few. Cut off the stalk so that the cabbage can stand upright on the baking tray. Preheat the oven to 200 degrees.
  • Cook the cauliflower in boiling water for about 10 – 15 minutes (depending on size), it should be almost cooked but not quite soft.
  • Remove the cauliflower from the water, drain and place on baking paper.
  • Rub the cauliflower thoroughly with olive oil, then salt.
  • Put the baking tray in the oven – bake for about 20 – 35 minutes until it is really crispy.
  • The cauliflower may look a little burnt – then it’s just right.
  • Mix the tahini paste with a few spoonfuls of water, add a little lemon juice and salt if necessary. Remove the cauliflower from the oven and add the sauce to serve.
