SOUP WITH LEMON BALM

PREPARATION

  1. Cut the cauliflower into florets and slices.
  2. Finely chop the leaves of the kohlrabi. Dice the onions and sauté.
  3. Add the chilli flakes, grated lemon zest and kohlrabi greens and sauté for a few minutes.
  4. Mix the cauliflower or kohlrabi with the lemon juice, then pour in the coconut milk and vegetable stock.
  5. Bring to the boil once. Vegetables should be firm to the bite.
  6. Season the soup with salt and fold in fresh lemon balm.
  7. Fold in the cooked quinoa.

INGREDIENTS FOR 2 SERVINGS

800 g cauliflower or kohlrabi

2 onions

2 tbsp olive oil or ghee

Juice of 1⁄2 lemon

Grate of 1 lemon

1 l coconut milk

1 tsp chilli flakes

1⁄2 l vegetable stock

1⁄2 bunch lemon balm

Salt

4 tbsp cooked quinoa
