TIPS

Works great for Meal Prep: the salad keeps for at least two days in the fridge. I fill it fresh into jars.

I always have some roasted seeds, sunflower seeds or nuts ready to top the salad with as well.

It becomes a full meal with seed crackers and hummus and who likes still some chicken.

PREPARATION

  1. You start with the dressing.  For this, grate the zest of two organic lemons and squeeze the juice from the lemons. Put the zest and juice into a power blender.
  2. Add all the other ingredients and blend until it is a homogeneous dressing free of chunks. If you don’t have a power blender, you can try it in a stand mixer or with a blender. To do this, soak the nuts in water for a few hours beforehand, then pour off the water and start pureeing.
  3. Now get a large salad bowl (preferably glass or porcelain).
  4. Remove the stalk from the cabbage. If you have a whole cabbage, quarter it and cut out the stalk in a wedge shape.
  5. Now cut the cabbage into very small shreds or put it in the power blender on the lowest setting.
  6. Do the same with the cucumbers.
  7. Cut the chives and spring onion into thin strips.
  8. Put everything together in the salad bowl.
  9. Now mix in the dressing so that it is well distributed.
  10. Add parsley or chives on top for decoration.
INGREDIENTS FOR 4 SERVINGS

Salad Ingredients:

1 very small head of white cabbage or 1/4 head of a large white cabbage.
3-4 mini cucumbers (or 1 large cucumber)
1/4 cup chives
1 bunch of spring onions
a bit of chives or parsley for garnish

Dressing Ingredients:

1 cup basil leaves
1 cup fresh baby spinach
2 cloves of garlic
1 small shallot
2 untreated organic lemons
1/4 cup olive oil
1/4 cup nuts of your choice
1 teaspoon salt
2 tablespoons vinegar of your choice
